This week I thought we would have Saturday Night Taco Salad...
I could have mexican every single day of the week!! I love it!!! Tacos, enchiladas, burritos!!
MMMMM and do not forget the queso!! hahahahahaa
Saturday Night Dinner
Taco Salad: taco meat, lettuce, tomato and shredded cheese.
Guacamole dip: 4 avacodos, lemon, cilantro, tomatoes, jalapenos, green onions, salt and pepper. cut all really small and mix together!!
Rice.. 1/2 chopped onion and 2 cloves garlic..saute in bacon fat ( or any fat ) add 2 cups rice... Brown rice a little..add cumin, salt and pepper... Cook one more minute then add 3 chicken bullion and 3 tomato bullion cubes ( or 1 can tomato sauce ) and 4 cups water... Bring to boil. Cover .reduce to simmer cook 18 minutes no peeking. turn off stove.. Wait 5 minutes before fluffing.

Cheese sauce is only velveeta, rotel and milk cooked in crock pot.
Chips- cut corn or even flour tortilla in wedges.. Deep fry at 350 a handful until brown and crispy.
Beans: add beans, ham, onion, garlic, salt, pepper and chili powder to crock pot fill 3/4 full with water..cook 8 hours on high...... To make refried beans.... Add chopped onion and garlic to pan cook in a little fat ( i use bacon grease) cook till soft. Add beans..and little juice..cook on highly frying beans. .using masher start mashing beans..mash all the way..add 2 tbsp flour and stir till thickened. If too thick add more beans juice. Then add 1 cup shredded cheese..cook till cheese melts..done.
